Creamed Rice with Fresh Mushrooms

Rizotto without meat – mushrooms and spices give the dish the right flavour, cream softens the risotto, parsley and parmesan pleasantly flavours.

Ingredients:

200 g of fresh oyster mushrooms 100 ml whipping cream 2 cups 1 cup round grain rice 1 piece of medium onion 4 tablespoons butter 2 tbsp chopped parsley 1 tsp of dried garlic 1 tsp crushed cumin parmesan white pepper salt

Procedure:

1. Melt two tablespoons of butter, coat the rice in it for a minute, add the stock and simmer under a lid, stirring occasionally, until softened – baste if necessary
2. Finely chop the onion and fry in the remaining two tablespoons of butter, add the cleaned and chopped mushrooms along with pepper, cumin and dried garlic
3. After five minutes, pour in two tablespoons of water and simmer until the mushrooms are soft
4. Then pour in the cream, reduce briefly and add to the rice
5. Stir the mushroom mixture into the finished rice and add the parsley
6. Sprinkle parmesan cheese on the plate and garnish with parsley.

Recommendation:

The mushroom can be replaced with other mushrooms, vegetarians can use vegetable stock.
