Cream of asparagus cream with bacon, easy and comforting recipe

If there is one thing I love to cook with the help of the food processors I’m having the chance to try that are the vegetable creams, both hot and cold, because they can not be easier and are made with minimal mess, as is the case of this cream of asparagus with bacon.
How to make a cream of asparagus with bacon
On this occasion we have made it with the Monsieur Cuisine Connect, but it is easily adaptable to other machines and, of course, it is also delicious if it is made in a normal casserole dish and blended at the end with a good arm blender.
Ingredients
. White asparagus, 600 g Bacon, 80 g Extra virgin olive oil, 2 tablespoons Large potato, 1 Onion, 1 Vegetable broth, 750 ml Liquid cream, 200 ml Cornstarch, 1 tablespoon (optional) Salt, to taste Pepper, to taste Fresh chopped chives, 4 teaspoons
Step 1
Pour the extra virgin olive oil into the glass along with the bacon, cover and program Simmer/130ºC/7 minutes. Remove the bacon from the glass and set aside.
Step 2
Wash the asparagus, if they are very thick and have very hard skin, peel them, but if they are thin we can skip this step. Next, we cut them in pieces of about five centimeters. Peel the potato and onion and dice them.
Step 3
Without washing the glass after removing the bacon, add the water, place the basket and put the asparagus, potato and onion in it. Cover and program Steamer for 12 minutes.
Step 4
Remove the basket from the glass, pour the broth into a saucepan and set aside. Pour the contents of the basket into the glass along with the cream and cornstarch and 500 ml of the reserved broth. Blend everything at Speed 4 for 20 seconds without temperature. If the texture is too thick, we can add a little more broth.
Step 5
Salt and pepper to taste and program 10 minutes/Speed 3/100ºC.
Step 6
Serve in individual bowls and garnish with the reserved bacon and some chopped chives.
