Crab lime paste
Crab pasta, which embraces Asian flavours, is a refreshing treat. Shrimp fits well into the recipe. Crab is one of the dishes that wine loves.
Ingredients for four
250g spaghetti 200g crab meat 1 lime 2 cloves of garlic 1 pinch of chilli 1 pinch of coriander 1 tbsp; 1 small leek 1 dl white wine 2 dl cream 2 tbsp olive oil salt and pepper
Bring to the boil and season with salt. When the water is bubbling, cook the pasta until al dente, just barely cooked.
Chop the garlic and the white part of the leek into a bowl. Chop up some of the green part of the leek and add.
Heat a large pan and add a generous amount of olive oil and onion slices. Freeze for a couple of minutes and pour the wine into the pan. Grate the zest of the lime into the pan.
When the liquid has evaporated, add the cream. Add the cream and the lime. Let simmer for a couple of minutes and season with chilli, salt and pepper. Toss the crabs in the sauce and squeeze the lime juice over them.
The crabs are ready in two minutes, and the crab meat is overcooked!
Stir in the pasta and sauce. Serve immediately.
