Heat the oil in a large saucepan and fry the finely chopped leeks.

Next, add the puréed garlic cloves and stir.

In the meantime, clean the zucchini from the top skin and grate it on a grater. Add to the peppers and garlic and mix together.

Salt and pepper the mixture and pour water over the zucchini so that it is covered.
5.
Bring to the boil and cook for about 20 minutes or until the zucchini is tender.
6.
Season with sugar and lemon juice and blend with a stick blender.
7.
Finally, add a slice of butter to soften.
8.
Serve with a poached egg and sprinkle with fresh herbs to taste.
