Cottage cheese-whipped cream cuts
ingredients
Piscuit dough:
12 egg (ingredients for two biscuits) 16 tbsp fine granulated sugar 12 tbsp semi-coarse flour 4 tbsp Dutch cocoa 2 KL baking powder 4 tbsp lukewarm water
Filling:
500 g soft lump-free cottage cheese 500 ml whipping cream 33% chilled 150 g powdered sugar 2 pcs Cream-fix Dr.Oetker vanilla paste or flavouring
Frosting:
200 g white chocolate frosting

Cupcake: make two cupcakes with the above ingredients. Each with six eggs. In a bowl beat with a pinch of salt six egg whites, beat in eight tablespoonfuls of sugar, one at a time six egg yolks, two tablespoonfuls of water, stir in gently six sifted tablespoonfuls of flour mixed with one KL of baking powder and two tablespoonfuls of cocoa powder. You can prepare the biscuits according to your own recipe.

Bake the biscuits in a deep baking tray lined with baking paper, 30x40cm. Temperature 180°C for 10-15 minutes. The figures are approximate. Let cool.

Filling: Whip the whipping cream with the whipping cream mixer until almost stiff. Add the curd which has been mixed with sugar and a little vanilla paste or flavouring. Beat together to the desired consistency. The ingredients must be at the same temperature so that the filling does not curdle.

Remove the paper from the biscuits, also the skin that has formed during baking. Spread the bottom slice with jam and filling. Cover with the second slice, press gently. Pour the melted white chocolate icing over the surface.

Refrigerate. Let stand, preferably until the next day. Using a hot serrated knife, cut into slices to prevent the icing from breaking. The slices can also be made in half batches, using one biscuit cut in half and making the filling with half the ingredients.
