Cottage Cheese Crostata

Italian corstatas are cakes that come in many forms. Most of them have a shortcrust pastry base, and the fillings can be either fruit, jam, or just a custard or vanilla filling. Often they are decorated with a lattice like our classic lattice cakes, but in some recipes the lattice is missing, such as in this case.

Ingredients:

For the dough: 500 g of plain flour 150-200 g sugar 125 g butter 3-4 pcs of egg 1 bag of baking powder For filling: 2 packets of cottage cheese 2 pcs egg yolks 1/4 bag of vanilla pudding 1 can of composted fruit without brine (strawberries, peaches, apricots…) sugar Other: breadcrumbs and butter to grease and line the pan powdered sugar to sprinkle over the finished crostata

Procedure:

From the flour and other ingredients, make a dough which you let rest for 30 minutes preferably in a bag in the fridge

Listen the compote, cut the fruit into small pieces

Mix the prepared fruit with the curds, season with sugar, add this to taste

Grease the cake tin with butter and sprinkle with breadcrumbs, then spread the dough into it, pour the filling, spread it evenly

Bake in a preheated oven at 170-180 °C for 35-40 minutes

After cooling, sprinkle the cake with icing sugar.
