Cottage cheese cake

ingredients

4 pcs eggs 200 g butter 250 g soft curd 250 g cottage cheese 250 g powdered sugar 300 g semi-coarse flour 1 pk vanilla sugar´ 1 pk baking powder 6 tbsp lukewarm milk 1 tsp lemon zest 1 tbsp cocoa

Wonderful, smooth cake.

Raw ingredients.

Mix sugar, room temperature butter and egg yolks. Add the cottage cheese, mix, then stir in the vanilla sugar, lemon zest, flour with baking powder and finally the stiff snow beaten from the egg whites.

Stir gently.

Grease the tin with butter and sprinkle with breadcrumbs. Pour in the batter. I poured in about 2/3 of the batter and colored the rest with cocoa powder and poured the cocoa batter on top.

Bake at 180°C for about 50 minutes. You need to test with a skewer to see if the cake is cooked through to the bottom.

Sprinkle with icing sugar.

The cake is soft, light, really delicious.
