Cooked courgette compote with apples

1,5 kg cleaned zucchini 1 kg cleaned apples 2,5 liters water 1 kg granulated sugar 1 pcs pineapple essence 1/2 dl vinegar

I also use zucchini for compote. I like it this way and I hope you will like this recipe too. 1. Clean and dice the zucchini.Then cover it with water and add half a dl of vinegar and stir.Let it soak like this for at least 10 h. It’s best to let it stand overnight. 2. Clean the apples and cut them into cubes as well.It is good to put them in vinegar water as well,so they don’t turn brown. 3. In the meantime, boil the zucchini,add sugar and pineapple essence. Cook the zucchini for at least 15-20 min. until it is glassy. 4. When the zucchini is cooked, add the drained apples.Stir the apples between the zucchini, cover the pot and once it starts to boil, turn off the heat.Pour the compote into the prepared bottles, bring the syrup to a boil and pour it into the bottles. Close the bottles and shake them upside down. Cover well with a blanket and leave until the next day until they cool down.
