Confit foie gras with cabbage and potato dumpling

1 kg goose meat 1.3 kg lard 3 cloves garlic 1 pk onion 2 stems rosemary 2 stems thyme to taste salt 2 tbsp honey
Ezemia dumplings:
1 kg potatoes boiled in skin 2 tbsp potato starch 350 g semolina 1 pk egg 2 KL salt
Kale:
1 pk red cabbage 1 pk onion 2 pk apple 3 tbsp honey 300 ml red wine to taste salt, sugar, red wine vinegar

1. The start of preparation should ideally be at least 6 hours before serving. Wash and dry the foie gras. Season it thoroughly with salt on all sides. Place it in the baking dish in which it will be baked. It must be high enough to baste the meat with lard. Add the peeled onion, garlic, rosemary and thyme. Pour the melted lard over it so that it is completely submerged. 2. Bake covered at 120°C for about 3,5 hours. The meat must be tender and very easy to peel off the bone. If you are preparing the meat the day before, let it cool, refrigerate it and the next day put the roasting tin in a hot oven to melt the lard and continue working with the meat. Remove from the fat, place in another baking dish, brush with honey and finish baking. Strain the lard and pour it into jars. It can be used for baking and frying. 3. Cut the cabbage into thin slices. Fry the onion cut into large pieces in the lard, add the apples cut into the same pieces and the honey. Let the mixture caramelise, add the cabbage, pour in the wine and simmer over a low heat. Stir the cabbage occasionally and add a little water if necessary. Finally, season the cabbage with salt, honey and vinegar. 4. Pour water into a large pot, season with salt and bring to the boil. Peel and grate the potatoes cooked in their skins on a fine grater. Add the potato starch, salt, egg and semolina to taste. Work into a smooth dough and divide into 4 parts. Make each part into a dumpling to cook. Place the dumplings in boiling water and cook for about 20 minutes. Turn them occasionally so that they do not stick to the bottom of the pot. 5. Everything is ready and we can serve.
