Coleslaw with Cheddar

Salad of white cabbage, carrots, onions, mayonnaise, lemon juice and cheddar cheese. Recipe from USA. The famous KFC chain has one of the patents for the recipe “Coleslaw”.

Ingredients:

1 piece of small white cabbage 1 pc red onion 2 pcs carrots 100 g of cheddar 8 tbsp mayo 2 tbsp sugar 2 tablespoons fresh lemon juice 1 tablespoon spices (optional) salt

Procedure:

  • Slice the cabbage in half, then quarter, cut off any woody parts and chop or grate into thin noodles.
  • Place the cabbage in a large bowl, season with salt, let it rest for a while, then press it firmly with your hands and knead it like dough – the cabbage will release its juices and become tender.
  • Add the cleaned, sliced carrot, peeled, thinly sliced onion, stir in the sugar, freshly squeezed lemon juice and set aside for 1 hour.
  • Then add the mayonnaise with finely chopped chives, mix everything well to disperse the mayonnaise evenly, add salt to taste and finally stir in the finely grated cheddar.
  • Recommendation:

    The salad is best left to rest for one to two days.
