Smoked Dandelion Pasta
Now it’s time to make a tasty dish of fish, as a change from those barbecues. I can’t even remember the last time we made pasta. Now the appetite has really grown! For summer, though, I’d do something summery – cold smoked butterfish pasta. It’s got capers, cilantro, parmesan, sun-dried tomatoes, garlic and lots of other super cool stuff! Definitely worth a try, because you don’t get pasta like this every day :).
You can choose which pasta you want to use. I used penne pasta, but fusilli and spaghetti would definitely work too. I bought the cold-smoked butterfish from M.V.Wool’s Mati fish shop. They always have fresh fish! Smoked fish is great in pastas and salads. The butterfish itself has a nice mild flavour.
Cold smoked butterfish pasta is also good for some more festive meals, as it is a bit more delicate, especially because of the rich ingredients. And the pasta bolognese wouldn’t surprise anyone either.
