Cold Creamy Apricot Soup

Don’t know what to do with the apricot crop? Try, for example, this cold apricot soup, which will surely refresh you in the summer heat.

Ingredients:

1000 g of apricots 100 g cooked rice 1 pc yolk 1 l water 1/4 l sweet cream 1 tbsp starch meal sugar to taste dried flowers mint leaves

Procedure:

Wash the apricots, drain, cut into chunks and cover with water, simmer for 15 minutes

Drain the cooked apricots and mash back into the stock

Turn the apricots into the stock./li>

Mix the starch flour with a little water, pour it into the apricot pulp, boil briefly until the pulp thickens

Set the pulp aside, let cool

Add the sweet cream and cooked rice to the cooled pulp, stir and chill in the fridge

Decorate the cold soup on a plate with mint leaves and dried flowers.

Recommendation:

The soup can also be made with fallen and rotten apricots, which we cut out.
