Coffee cake with apples and raisins

2 pk egg 50 g sugar 1 pk big apple 70 g coconut fat 1 tbsp cinnamon ground 1 tbsp instant coffee 140 g spelt flour 2 handfuls raisins 1 tbsp baking powder

Take the eggs out of the fridge at least 30 min before baking to bring them to room temperature

Blend the whole eggs by hand with the sugar and coconut fat. Coarsely grate the apple and skin and add to the mixture. In a separate bowl, mix the flour with the baking powder, cinnamon and coffee.

Mix the dry mixture carefully with the liquid mixture. Finally, stir in the dried raisins.

Line a small round mould with 17 cm diameter with baking paper and pour the batter into it.

Bake the cake at 170 degrees for about 35 minutes. Enjoy!
