Cod with parmesan crust

600 g potatoes 600 g cod 100 g parmesan 4 handfuls breadcrumbs 1 handful handful herbs (basil, chives, parsley), chopped very finely 5 tbsp olive oil salt, pepper, 125 ml cream butter to grease the baking dish

Fine, delicious cod with a crust of parmesan and herbs, baked on creamed potatoes will not dry out, it will remain tender, crispy, delicious. Wonderful not only for Easter!

Cook the potatoes in the peel, let cool a bit, peel and cut into thin rounds.

Brush a baking tin with butter and arrange the potatoes on the bottom. Season with salt and pepper and pour the cream over the potatoes.

Salt the fish, season lightly with pepper. Place on top of the potatoes so that they are completely covered with the fish. It can be cut into portions.

In a bowl, stir together the parmesan cheese, salt, pepper, breadcrumbs and herbs. Pour in the olive oil and stir to coat the loose mixture. It still needs to be sprinkled, so it doesn’t get too oily.

Cover the fish with the meat. The thickness should be at least one centimeter.

Bake at 180 degrees for about 20 minutes. Be careful not to burn the crust.

Tip: Use a smaller baking dish so that the fish fills it completely.
