Cod tartare with green apples
Here’s the first recipe we learned in cooking school, cod tartare. We decided to teach the participants a recipe that looks like an expensive restaurant dish, but is very easy to make at home and surprise your guests with.
Cod is a very tasty fish and Margit says it could be used in more dishes than is currently made in restaurants, for example. That’s why Margit chose cod for our tartare. The cod comes from M.V.Wooli’s Mati Fish Shop, where we got it frozen. Somehow people are afraid to cook with frozen fish because they think it will have a bad taste, but it makes a very good tartare. The fish needs to be thawed a few days in advance (from the freezer to the fridge to thaw slowly). This way, the fish will not get any side flavours.
Making tartare is very easy. The cod must be cleaned and cut into small cubes. The second ingredient in our dish is the green apple, which also needs to be chopped into small cubes. Mix them together in a bowl and then add our next ingredient, which is the vodka. Do not add a lot of vodka, but add it in moderation to taste. There is another reason for adding vodka, and that is that it cooks the fish. This is why cod tartare should be served immediately.
We served the cod tartare on Gastrolink’s stylish and currently very popular black plate. These plates are also used in many expensive and popular restaurants. They also have some very cool forks and knives for sale in their online shop.
