Cod a´la Trondheim

Recipe from Norway for oven-baked cod with vegetable mixture.

Ingredients:

4 pcs portions of cod 2 pcs small carrots 1 pc onions 120 g of cleaned celery 60 g of white bread (bun) 60 g butter 2 tbsp breadcrumbs ground pepper parsley salt

Procedure:

  • Cut the cleaned carrots and celery into cubes, cut the onion into fine half-rounds, and peel the bread slices and cut them into cubes as well.
  • Mix everything well with melted butter, salt and ground pepper.
  • Place the salted, peppered portions of the fish fillets in a shallow, buttered pot or baking dish, cover them with the vegetable mixture and sprinkle with breadcrumbs.
  • Bake the dish until tender in a well heated oven at 190 °C, garnish with parsley and serve.
