Coconuts and jam coconuts

5 pcs fresh egg white 200 g shredded coconut 130 g powdered sugar 3 tbsp plain flour 1 packet vanilla sugar 1/4 KL baking powder 2 pinches salt

Recipe for really FANTASTIC coconuts They are soft and crunchy at the same time, smooth and taste fantastic! But they are best with jam, which actually gives you two different baked goods at once 1.

First, mix coconut, flour, salt, baking powder in one bowl and set that aside for now. Now, whip your egg whites with both powdered and vanilla sugar until foamy, adding the sugar to the egg whites a tablespoon at a time as you whip. Beat until the foam is quite stiff, it shouldn’t move when you turn the bowl upside down 🙂 Finally, stir the prepared coconut-flour mixture into the foam a tablespoon at a time. We will get such a semi-thick mass.

Next, using two spoons dipped in water, form smaller balls on a baking sheet with paper, the size of a tangerine. Finally, put them in the oven, which you have preheated to 190 °C for 10 minutes. The coconuts should just turn a little pink. As far as baking time is concerned, you need to be guided by your own oven. The coconuts are still soft to the touch when hot, but they will firm up a little more as they cool.

The coconuts are really delicious. The dough is light and crispy. The combination of coconut and vanilla is really very delicious and stands out beautifully in these coconuts.

As a little bonus with these coconuts, they are great for sticking together with jam or jam. I make mine with strawberry or apricot. Glue the baked coconuts with any kind of jam as soon as they cool and set them aside in a box somewhere. After a few hours they are beautifully soft and the flavours have melded together. If you want, you can also drizzle a little chocolate on top for a nice touch. This way you actually get two cookies at once I can only recommend them, you won’t regret trying them. They are really fantastic
