Coconut soup

ingredients

250 g prawns 30 g galanga 30 g fresh ginger 30 g lemongrass 1 litre coconut milk 10 pcs chilli 1 tbsp coriander 20 ml oil a little lime leaves 20 ml fish sauce 1 pcs spring onion a little greens for garnish

procedure

1. In a large pot, fry the sliced spring onions and prawns in oil. Pour in the coconut milk, add the galanga, lemongrass, coriander, fish sauce, lime leaves and cook the soup for about 10 minutes. 2. Strain the soup, add the prawns back into the soup and garnish with chillies and fresh spring onions and carrots.
