Coconut and coconut slices on a wafer

Cesto 1
4 pcs egg white 180 g powdered sugar 100 g coconut flour 2 tbsp semi-coarse flour 2 pcs cake wafers

4 pcs egg white 180 g icing sugar 150 g ground walnuts 2 tbsp semi-coarse flour 2 pcs cake wafers
Filling
8 pcs egg yolk 100 g icing sugar 250 g butter

Cesto 1: whip the egg whites with a pinch of salt to foam, beat in the sugar a tablespoon at a time, add the coconut flour and semi-coarse flour. Line a baking tray with wafers and spread the batter. Bake at 160 degrees for 15-20 minutes. Leave to cool. Baking sheet size 32×38 cm, can be smaller, then the cuts will be higher.

Cesto 2: beat egg whites with a pinch of salt to foam, beat in sugar a tablespoon at a time, add ground nuts, semi-coarse flour. Line a baking tray with wafers and spread the batter. Bake at 160 degrees for 15-20 minutes. Let cool.

Filling. Let cool. Beat in butter and add cooled egg yolk foam a little at a time.

Place the coconut dough on top, spread the filling and turn the wafer over the top. Weigh down and let stand until the next day. Then slice and decorate, e.g. with chocolate. Enjoy!
