Clam Soup (Kai Jiru)

Simple recipe for a tasty soup made with canned mussels, soy sauce, rice or white wine and strong broth.

Ingredients:

3.5 cups of strong Dashi-kombu broth 1 small can of mussels 1 tbsp soy sauce 3/4 tsp rice or white wine salt lemon wedges for garnish

Procedure:

1. Add the mussels to the pre-cooked, boiling broth and let them simmer for a while
2. Add salt, soy sauce and wine, stir and remove from heat
3. Serve individual portions hot, garnished with lemon wedges.
