Clafoutis with cherries

It is a typical French baked dessert. It is usually made of cherries or apricots, but you can also use strawberries, raspberries or grape balls.

Procedure:
1. Wash the cherries well and drain
2. Grease four 250 ml baking dishes with softened butter, sprinkle with almond flakes and vanilla sugar and divide the fruit among them
3. Beat the softened butter to a thick foam with the icing sugar and egg yolks, stir in the finely grated almonds, cream and plain flour mixed with baking powder
4. Finally, stiffly fold the egg whites into the batter
5. Divide the batter into baking dishes (no more than two thirds – it will rise), sprinkle with the remaining almond flakes, place in a preheated oven and bake at 180 °C until golden brown, about 40 minutes.
