Christmas Eve cabbage soup

Christmas dinner cabbage soup is a perfect substitute for fish soup, if you don’t like fish soup very much. However, it is very filling and so do not overdo it with the portion of Christmas cabbage soup, so you have room in your tummy for other Christmas meals!

Ingredients:

350-400 g of organic sauerkraut 400 g bio sausage of preference 250 g bio potatoes 120 g smooth flour 100 g organic sour cream 100 g organic butter 2 l water + water to boil potatoes about 250 ml bio milk 1 pk bio onion, larger organic quality pepper organic quality cumin salt

Procedure:

  • Start by preparing the cabbage, first draining and cutting it into medium-sized pieces. Then put it in a pot, cover with about 2 litres of water and boil until tender.
  • In the meantime, prepare the potatoes by cutting them into small cubes. Place these in another pot, cover with water, add salt and cumin and cook for about a quarter of an hour, also until tender.
  • While they are cooking, prepare a light roux (melt the butter in a pan, add the plain flour, which you let, stirring constantly, in the hot fat, just foam, remove the pan from the heat source and use the roux).
  • Stir the hot roux lightly into the cabbage and cook together. Add the cooked potatoes, chopped onion, and the browned sausage slices to the mixture, and finally pour the milk over everything and boil again.
