I’m sure that during these dates there has been plenty of time to cook and experiment with different recipes that we do not usually dare with in our day to day. Recipes that turn everything upside down, but that serve as trial and error for the next dinners and there is a lot to prepare with care for the family menu with a lot of care. A few days ago, the possibility of making homemade gnocchi was raised.
A simple elaboration of homemade pasta, ideal to make with children, which is very worthwhile even if we bog down the kitchen with flour, but the texture that we gain by making them homemade is not comparable to any of those that we buy already prepared. As always happens, in Spain, after the feasts there are many leftovers and, from Cocinillas, we do nothing more than give ideas like a stuffed mashed potatoes, a lasagna, or a pudding of roscón de reyes.
This homemade pasta left over from making some fabulous gnocchi with tomato sauce or cheese or truffle sauce can be converted into a Christmas consommé; a recipe with gnocchi and beans to which we add a concentrated broth that we would have made from our main dish and a little bit of Vegetable Recipes. A dish of use that serves to add all those Vegetable Recipes that we have forgotten in the bottom of the fridge and that revitalizes our soul. Invigorating, comforting and full of flavor; the Christmas consommé is an ideal dish to make the transition between the starters and the main course.
The good thing about preparations of this style is that they can be left ready in advance and so, on the big day, enjoy our family and friends. In addition, they can be made to everyone’s taste: ham, chicken, beef bones, Galician… The possibilities are endless and the ingredients to add, too.
How to make Christmas consommé
Ingredients
. Consommé, 700 ml Potato gnocchi, 200 g Frozen or canned beans, 200 g Carrot, 1 ud Pumpkin 100 g Soy sauce, 1 tablespoon Extra virgin olive oil, 1 tablespoon Salt, to taste
Step 1
The first thing to do is to chop the carrot and pumpkin very small, in squares, and cook in the broth of the consommé together with the beans if they are frozen (if they are from a jar it will not be necessary). We will have to leave it to boil gently until everything is tender, about 20 minutes.
Step 2
Incorporate then the well-drained beans if they are canned, let cook 5 minutes over very low heat, never break the boil.
Step 3
Add the gnocchi in the last three minutes and cook until they float, add the soy sauce and season.
Step 4
Serve with a drizzle of extra virgin olive oil on top to finish once it is already on the plate.
Tricks and suggestions
Just as we use beans, we could add the chickpeas from the soup and also use any type of pasta we have on hand at home, even whole wheat.
