Chorizo sandwich on French bread

Chorípan is one of the most popular sandwiches in South America. It is a sandwich of chorizo sausage on a peeled bread roll (“chor” for chorizo y “pan” for bread)). Chorípan is a popular modern food that is best grilled directly (similar to North American hot dogs). Chorípan is particularly popular in Chile, Argentina, Uruguay and Peru. In Chile, it is often made with an unusually shaped French bread roll, called marraqueta and flavoured with pebre . In Argentina, it can be enjoyed with chimichurri sauce. Peeling potatoes is also a popular addition.

Choripan is just one of the most popular modern food choices in Latin America. Other favourite sandwiches include butifarra ( pork cooked in onions), Chilean chacarero (steak, peppers and green beans) and Uruguayan chivito (churrasco, ham, cheese and fried egg).

What you’ll need

4 fresh, peeled French levain rolls (or 1 large baguette divided into 4 pieces or 2 marraquetas , each divided into 2 pieces) 4 Mexican-style chorizo sausages 1 tbsp olive oil 1 tablespoon mayonnaise Optional: A spicy salsa, such as pebre or salsa criolla

How to make it

Place the sausages in the bottles and add 1/2 inch of water to the bottom of the pan. Cook over medium heat until the water has evaporated, turning the sausages once. Remove the sausages from the bottles and cut (almost) in half lengthwise, leaving the two pieces closed. Add 1 teaspoon of olive oil and place the sausages in the bottles, divide and flatten. Cook over medium heat until well browned on both sides. Preparing the sausages on the barbecue: first cook the sausages whole until all sides are browned, then remove from the barbecue and cut in half lengthways. Cut the shredded sausages and place on the grill, cook until browned on both sides and cooked through. Cut each loaf into a roll, spread with mayonnaise, mustard and any other desired seasonings and serve warm.
