Sunday cake but suitable for any occasion, recently a friend and his friends asked me for a chocolate banana cake, so I combined a couple of recipes and this cake was created.
1.
Beat the egg yolks with the icing sugar and vanilla sugar until frothy, add the soft butter and beat well. Then add the melted chocolate.
2.
Beat the egg whites separately with a pinch of salt until stiff, then gently fold them into the chocolate mixture.
3.
Finally stir in the flour and baking powder
4.
Bake in a greased or paper-lined 24-26cm diameter tin at 190°C for 20mins and then reduce to 160°C and bake for a further 40mins
5.
While it is baking make the cream. Put the milk and sugar on to boil, add the flour to the boiled milk and stir until thickened.
6.
Let the cream cool, if you want to have a softer fluffier cream after cooling you can add butter, I didn’t use it.
7.
While the cake and the cream are cooling, prepare the sugar brew. Pour water over the sugar. I put enough water so that the sugar is completely submerged. And we boil it together until the sugar melts and the whole thing boils. Then set it aside.
8.
Finally, when we have everything cooled down, we coat or soak the cake in the sugar solution.
9.
Mix the cream with the mashed banana (or other fruit) and spread it on the cake.
10.
Decorate with whipped cream and chocolate chips or to your own imagination
11.
Good taste 🙂
