Chocolate mousse cake with Thermomix

Here is the recipe for chocolate mousse cake with Thermomix,a tasty chocolate cake easy and simple to make for an elegant and refined dessert.
Ingredients:
For the sponge cake:
3 eggs 60 g sugar 40 g flour 15 g bitter cocoa 1/2 packet baking powder
For the chocolate mousse:
320 g dark chocolate 300 ml liquid cream 225 ml cold full cream 25 g powdered sugar
For the assembly:
1/2 cup of coffee sweetened with bitter cocoa
Preparation:
Preheat the oven to 180°C.
Put the eggs and sugar in the bowl then mix for 1 minute on speed 3.
Add the flour, cocoa, yeast then set 20 seconds on speed 4.
Pour the preparation into a greaseproof paper-covered cake tin then bake for 10 to 12 minutes.
Allow to cool then unmould the sponge cake.
For the chocolate mousse, put the chocolate in the bowl then mix for 10 seconds at speed 9.
Add the liquid cream then set for 4 minutes at 50° at speed 2.
Pour the mixture into a bowl and let it cool.
Wash and dry the bowl, insert the whisk then pour the whole liquid cream and place in the fridge for 10 minutes.
Then set 1 minute 30 seconds at speed 3.
Add the powdered sugar and set 1 minute on speed 4.
Incorporate the whipped cream into the melted chocolate and mix gently with a spatula.
For the assembly:
In the same mold manqué arrange the sponge cake again and then soak it with sweet coffee.
Then pour the chocolate mousse over the sponge cake and smooth the top well.
Place the mold in the refrigerator for 3 to 4 hours.
Before serving unmold, sprinkle with cocoa, decorate then serve your cake.
