Chocolate Mousse and Baileys Log in Thermomix

Here is the recipe of the log with chocolate mousse and Baileys in Thermomix, a tasty Christmas log,chocolatey, easy and perfect to make to treat your guests at dessert time.
Ingredients:
For the chocolate and Baileys mousse:
150 ml Baileys 3 egg yolks 8 egg whites 130 g powdered sugar 220 g dark chocolate 200 g liquid cream 35% mg 2 sheets of gelatin
2 eggs 60 g flour 60 g sugar 2 tablespoons Baileys
For the chocolate ganache:
75 ml liquid cream 100 g dark chocolate
Preparation in Thermomix:
Insert the whisk into the bowl then put the egg whites and whip them for 6 minutes at 37° on speed 3.5.
After 4 minutes add half the sugar, then set aside.
Soak the gelatin leaves in cold water for 10 minutes.
Wash and dry the bowl then put the chocolate and mix for 10 seconds at speed 10.
Add the cream and Baileys then set 4 minutes at 60° on speed 1.
Add the egg yolks and the remaining sugar then set 3 minutes at 70° on speed 4.
At the buzzer add the wrung out gelatine then mix for 20 seconds at speed 4.
Incorporate the egg whites then gently mix with a spatula.
Pour the preparation into a log pan, smooth then place in a cool place.
Meanwhile, prepare the cookie, insert the whisk into the bowl then put the eggs and mix for 3 minutes at speed 3.
Add the flour, sugar and Baileys then mix for 10 seconds at speed 4.
Pour the preparation into a baking tray lined with baking paper then bake in a preheated oven at 180°C for 7 to 10 minutes.
Once cooked turn out the cookie then let cool and cut into a rectangle ( the same size of the gutter).
Then remove the log from fresh, place the cookie then press a little to assemble it with the mousse.
Then put in the fridge for 8 hours.
After 8 hours, prepare the ganache, put in the bowl the chocolate then mix 10 seconds at speed 10.
Add the cream then set 3 minutes at 50° at speed 2.
Unmold the log then pour the chocolate ganache on top of the cake.
Decorate then place in the fridge until ready to serve.
