Chocolate eclairs recipe

Ingredients

Portions: n/a 120 g of my salt 140 g of plain flour 4 eggs 100 g of chocolate 125 ml whole milk Sour cream 500 ml whipped cream Ice chestnuts

Recipe preparation steps

1 Prepare the cream the day before. Warm the whipped cream and pour the hot cream over the ice chestnuts. When the chestnuts have melted, whisk until smooth and cool. Sift the flour with the salt. Heat the milk with the salt and 125 ml of water until the salt has dissolved. Bring to the boil, reduce the heat to a simmer, add the flour and stir until the dough begins to rise from the bottom. When cool, gradually beat in the eggs. Using a sugar bag with a star-shaped spout, cut out different lengths of bars on baking trays lined with baking paper.
