Chiraši with smoked salmon

A bowl full of tasty smoked salmon pieces served with sushi rice, cucumber and ginger.

Ingredients:

Range for 4 servings: 200 g of smoked salmon 800 g prepared sushi rice 1 piece chemically untreated citron 1 piece small salad cucumber 2 tablespoons

td>light sesame seeds 2 tbsp black sesame seeds 1 tablespoon rice vinegar 1/2 tsp sugar 2 cm ginger root salt

Procedure:

1. Wash the lemon with hot water, dry and quarter lengthwise, then cut the three quarters crosswise into thin slices and remove the pips
2. Slice the smoked salmon into small bites, squeeze the last quarter of the lemon over it and distribute the juice evenly over the meat
3. Toast the light sesame seeds in a Teflon pan without fat until golden brown and let cool
4. Wash the cucumber and cut into thin slices or grate it, mix the rice vinegar thoroughly with salt and sugar, then add the marinade to the cucumber
5. Remove the cucumber slices from the marinade, divide the prepared dried rice into four bowls, arrange the other ingredients on top and serve sprinkled with black and light sesame seeds.

Recommendation:

Fresh ginger has a very pungent flavour, its pungency is mellowed by placing the noodles or slices in cold water for a few minutes.
