What you’ll need

1 pound chicken breast (boneless, skinless) 1 can/8 ounce bamboo shoots 1 cup snow peas (or other green Vegetable Recipes) 2 slices ginger 4 tablespoons oil (for frying or as needed) 1/4 cup almonds (toasted) for the marinade: 2 tablespoons oyster sauce 1 green onion (chopped) 2 teaspoons cornstarch For: 1/2 cup chicken broth (low sodium) 1 tablespoon rice wine (or dried sherry) 1 teaspoon sugar 2 teaspoons soy sauce

How to make it

1. Rinse the chicken breasts and clean dry. Cut the chicken breasts into thin strips (this is easiest if the chicken is partially frozen). Combine chicken with oyster sauce , chopped green onion and cornstarch. Marinate the chicken for 20 minutes.

2. While the chicken is marinating, prepare the sauce and Vegetable Recipes. To make the gravy, combine the chicken broth, rice wine or dried sherry , sugar and soy sauce (a few cups will work well)

Put aside.

3. Rinse the bamboo shoots in warm running water and drain.

4. Heat a large wok over medium or high heat. While water is heating, add 2 tablespoons of oil. Add the chicken. Stir-fry until chicken turns white and is about 80 percent cooked. Remove from wok.

5. Heat 2 tablespoons of the oil. Add ginger slices and stir-fry until fragrant (about 15 seconds). Add the snow peas (or whatever other Vegetable Recipes you are using). Stir fry briefly and add bamboo shoots. Stir-fry for 1 minute.

6. Add the sauce to the center of the water bath. Heat to bubbling. Add the chicken back to the water pot and stir everything together, making sure the chicken is cooked before removing the wine. Sprinkle with the candied almonds before serving. Serves 4
