Chinese Fish Soup

Soup of fish pieces, mushrooms, star anise, lemon juice, mung sprouts and spring onions.

Procedure:
1. Carefully remove all skin from freshly bought fish and cut the meat into larger pieces
2. Soak dried mushrooms in cold water beforehand and clean the fresh mushrooms well, then cut them in half
3. Bring a pot of water to a boil, add the chopped fish, mushrooms, lemon juice, star anise, salt and simmer for about 10 minutes to cook the fish, then carefully remove it
4. Add the cleaned diced spring onions, mung sprouts and olive oil to the prepared broth, then boil briefly (2 minutes), add back the fish pieces, season with salt and pepper and serve.
Note:
To make this soup you need to buy really fresh fish, salmon is ideal, but some white fish will also do.
