Chicken with Mole Sauce

Mole combines seemingly disparate and exotic flavours. However, the result is a harmonious, spicy, sharp and sweet chocolate flavour. The sauce should be spicy, but the degree is up to the cook.

  • Melt the chocolate in the mixture, add the spices and simmer over a low heat for 20 to 30 minutes until the flavours have combined
  • In the meantime, dry roast the sesame seeds in a nearby pan, season the sauce with salt as needed
  • Pour the sauce over the chicken, sprinkle with sesame seeds and serve with tortillas or rice.
  • Recommendation:

Although the original recipe includes up to 4 types of chili peppers (Ancho, Pasilla, Mulato, Habanero), the classic dried chili peppers that are commonly available in our country will also suffice. In Mexico, this sauce has many different ones. It can differ, for example, in the fruit added, such as bananas and plums, as well as the types of nuts and, above all, the meat it complements. However, the traditional recipe includes chicken, raisins and almonds.
