Mole combines seemingly disparate and exotic flavours. However, the result is a harmonious, spicy, sharp and sweet chocolate flavour. The sauce should be spicy, but the degree is up to the cook.
Ingredients:

tomatoes (can also be substituted with 150g peeled tomatoes from a can)

dark chocolate
4 tbsp
shelled unsalted almonds
2 tbsp
raisins
1 tsp
oregano
1/2 tsp
allspice
1/2 tsp
cloves
1/2 tsp
cinnamon
sesame seeds
oil
salt
water or broth to baste
corn tortillas to serve
Procedure:
Bake the salted chicken in the oven at 180°C until golden
Dry roast the almonds in a pan and set aside
.In a deep frying pan, fry the finely chopped onion, garlic and chillies in oil, add the raisins and tomatoes and heat through together, remove the mixture and blend, if the sauce is too thick then thin it slightly with water or stock and return to the pan

Melt the chocolate in the mixture, add the spices and simmer over a low heat for 20 to 30 minutes until the flavours have combined
In the meantime, dry roast the sesame seeds in a nearby pan, season the sauce with salt as needed
Pour the sauce over the chicken, sprinkle with sesame seeds and serve with tortillas or rice.
Recommendation:
Although the original recipe includes up to 4 types of chili peppers (Ancho, Pasilla, Mulato, Habanero), the classic dried chili peppers that are commonly available in our country will also suffice. In Mexico, this sauce has many different ones. It can differ, for example, in the fruit added, such as bananas and plums, as well as the types of nuts and, above all, the meat it complements. However, the traditional recipe includes chicken, raisins and almonds.
