These crispy chicken parmesan wings are perfect for any holiday. This easy recipe takes less than 10 minutes to prepare and relegates almost all of it to the oven, allowing us to be preparing or doing other things in that time. In addition, they are much lighter when baked instead of fried, and they look great with the garlic and Parmesan seasoning on the outside. If you have guests at home and want to make an easy and informal snack, they will be perfect to serve next to some original hummus, a cheeseburger salad that will surprise everyone, some crispy baked potatoes with poached egg, an octopus empanada or some easy nachos with chili con carne.
When we see this recipe it totally reminds us more of an American recipe than a recipe from Spain but…. How delicious are the wings to eat directly with your hand and gnaw every last crumb of their meat! How versatile they are also, chicken wings allow us many versions and side sauces and always please everyone.
To get crispy chicken wings in the oven there are a few things to keep in mind:
Dry the wings very well with the help of a paper towel. Dress with a little oil and the spices we want. Give them a touch of baking soda. Bake and finish with the grill lightly. Bake on a rack to give the heat as evenly as possible.
What is the effect of baking soda? It simply alkalizes the skin levels and makes the browning in the oven more evenly browned. I also like to add it when I am going to fry them, it gives them a very particular texture. It is important to never wash the wings with water before cooking, from the package directly to the paper to dry them and to the oven rack.
For our outer dressing today we will mix the melted butter with the grated cheese, paprika, parsley, salt and black pepper and, when they come out of the oven, we will pass through this ointment the very hot wings. In addition, we could make a creamy sauce on the side with these same ingredients to dip them as we eat them, but this is optional for each one of us. A touch of spice is always welcome if you like it.
How to make chicken wings Parmesan
Ingredients
. Chicken wings, cut in half, 16 pcs Butter, 3 tablespoons Olive oil, 1 tablespoon Salt, 2 teaspoons Ground black pepper, 2 teaspoons Garlic powder, 2 teaspoons Grated Parmesan cheese, 4 tablespoons Smoked paprika, 1/4 teaspoon Chopped parsley, 1 tablespoon Baking soda, 1 teaspoon
Preheat the oven to 190 ºC and remove the wings from the packaging. Dry each wing one by one until completely dry. Prepare a mixture of salt, garlic powder and black pepper. Spread the wings lightly with oil, making sure they are well coated. Place the chicken wings on the oven rack and season with the seasoning mixture. To avoid making too much mess put a tray with an aluminum foil or baking paper underneath, so that whatever needs to fall on it will fall. Arrange the wings just enough apart so that they get the heat. Bake the wings for 30 minutes, turning them over halfway through cooking. After this time turn on the grill and bake for 8-10 minutes until golden brown. While the wings are baking we can prepare the parmesan seasoning. To do this we will have to chop the parsley and grate the parmesan and mix them with the rest of the salt, black pepper and garlic powder that we have left over from seasoning the wings. Add also the smoked paprika. Mix everything with the melted butter. When the wings are ready, put them in the same bowl as all of the above and mix well so that they are seasoned with all of it.
