Ingredients:4 servings – 4 SP / Serving 450 g chicken breast 2 red and yellow peppers, cut lengthwise 1 medium onion, sliced into rings 3 teaspoons olive oil 1 avocado 100 g 2 lemons a little chopped coriander 1 small lettuce Salt and pepper Preparation:
Start by heating the grill.
Season the chicken with salt and pepper.In a large bowl, toss the peppers and onion with 1 teaspoon of oil and season with salt and pepper.
Cut the avocado in half, remove the pit and skin, then rub gently with 1 teaspoon oil.
Grill the chicken until done, 7 to 8 minutes per side, then set aside.Grill the Vegetable Recipes until tender, 4 to 6 minutes per side, and finallythe avocado, 1 to 2 minutes.
Chop the peppers, separate the onions into rings, chop the lettuce and dice the avocado.Slice the chicken.
Finely grate the zest of one lemon, then in a bowl mix it with 6 tablespoons of lemon juice, the cilantro and a spoonful of oil.
Serve your salad in separate dishes and pour the lemon dressing over it.
