Chicken po myslivecku II.

Chicken thighs and wings roasted with tomatoes in a marinade of wine and other ingredients.

Ingredients:

2 kg of chicken thighs and wings 400 x 2 cans of sliced tomatoes 6 pcs of anchovy fillets 2 pcs garlic cloves 1 handful speckled black olives olive oil ground pepper smooth flour salt For the marinade: 0.5 l of chianti wine 8 pcs of bean leaves 2 pcs rosemary seeds 1 pcs garlic cloves

Procedure:

1. Wash and dry the cleaned chicken thighs and wings, season with salt and pepper on all sides
2. Put the bay leaves, thyme sprigs, peeled, crushed garlic clove, add the wine, stir, add the chicken thighs and wings and leave to marinate overnight
3. Remove the meat from the marinade, pat dry, roll in flour, fry gradually in hot oil to brown the meat, remove from the pot and set aside
4. Add a little oil to the pot, fry the peeled, sliced garlic cloves, add the anchovies, black olives, tomatoes (crush the large pieces with a cooker) and finally return the chicken to the pot and pour the marinade
5. Bring to the boil, cover and bake in a preheated oven at 180 °C for about 90 minutes until tender
6. Season the sauce with salt and pepper as needed, remove the bay leaves and thyme and serve with fresh baguette.
