Chicken Liver with Mash
Chicken liver sauteed with onions, dry sherry and chicken broth, served with mashed potatoes.
Ingredients:
Procedure:
1. Melt half of the butter in a pan, add the peeled onion cut into thin slices, sauté slowly for 15-20 minutes, stirring occasionally, until the onion is completely soft and golden, then remove and set aside
2. Put the rest of the butter in the pan, when it has melted add the cleaned liver, fry it for about 5 minutes so that it browns on the outside and stays pink on the inside, season with salt and pepper to taste
3. Pour in the sherry and chicken stock, after a while return the onions to the pan, bring to the boil, then reduce the heat and leave to bubble for two minutes
