Chicken Liver Cocktail

Recipe for a cold cocktail made from chicken liver pieces, spicy mayonnaise sauce and other ingredients, served in stemmed glasses. Original recipe name: Csirkemájkoktél.

Ingredients:

Rule for 10 servings: 1 kg of chicken liver

. 2 kg of apples (preferably Jonatanas) 2 kg of apples (preferably Jonatanas) 300 g of mayonnaise 200 g of whipped cream 10 pcs quail eggs (can substitute 3-5 chicken eggs) 2 pcs lettuce 2 pcs lemon 1 handful of green parsley white wine, Tokaj (“Szamorodni”) Worcestershire sauce chayenne pepper powdered sugar estragon ketchup water pepper salt

Procedure:

1. Clean the chicken livers and place them in boiling salted water for a while, then remove them, cool them with cold water, set aside the larger pieces and strain the rest through a sieve
2. Pour the mayonnaise, passir livers, freshly whipped cream, finely chopped parsley and tarragon into a stainless steel container, season with lemon juice, sugar and cayenne pepper, whisk with a hand-held immersion whisk until smooth while adding Worcestershire sauce, ketchup and Tokaj wine, put the finished sauce in the fridge to cool<
3. Line ten cocktail glasses or champagne glasses with chopped lettuce leaves, top with sliced apples and chicken liver pieces
4. Pour the cooled sauce over everything, sprinkle with a little tarragon, garnish with boiled eggs and lemon wedges
