Chicken Liver Baked in Bacon

Oven roasted chicken liver wrapped in smoked pork flank, topped with honey sauce on plates.

Procedure:
1. First prepare the honey sauce; cut the vanilla pod lengthwise, scrape out the pulp and mix it in a bowl with honey and white wine, then add the rest of the pod (skin), cover the bowl and put it in the pantry for 24 hours or more
2. Clean the chicken livers well, pepper, wrap each piece with a thin slice of pork flank or English bacon, tie with a toothpick, spread on a baking tray, season with salt, immediately place in a preheated oven at 180 °C and bake so that the wrapper is cooked golden brown and the livers remain pink inside
3. Divide the finished liver on plates, pour the warmed honey sauce over it, add salt to taste and serve immediately with toast or fresh white bread.
