Chicken in salt crust recipe
Ingredients
4 servings 100 ml of olive oil 4 cloves of garlic 3 handfuls of parsley 1 handful of parsley 1 handful of thyme 1 handful of rosemary 2 kg of salt ground pepper 1 piece of chicken 5 pieces of egg white 100 ml of water 2 pcs. Lemon zest
Recipe preparation
1 Mix the olive oil with the chopped garlic cloves, a handful of parsley, thyme, 2 rosemary, a pinch of salt and 1 teaspoon pepper. 3 In a bowl, mix 2 kg of salt with the egg whites, lemon zest, the remaining parsley and 10 ml of water until the mixture resembles wet sand. Spread the bottom of the baking dish with about 2 cm of the salt mixture, place the chicken on top and sprinkle with the salt mixture. 4 Form a smooth salt lump and bake in a preheated oven at 200 °C for about 2 hours, depending on the size of the chicken. Let the baked chicken rest for 10 minutes, then break the crust with a mallet and cut the meat.
