Chicken Enchiladas II

This recipe with chilli from KitchenAid is suitable for example as an appetizer. It comes from Spain and as it happens, there are dozens of variations of this recipe.

Ingredients:

Ingredients (4 servings): 350 g of chopped cooked chicken 225 g shredded Mexican cheese 225 g softened cream cheese 115 g of sun-dried tomatoes 35 g young onions 14 g of cumin 4 pcs

1/2 cup tomato salsa 2 teaspoons lime juice 2 teaspoons ground chilli 2 tsp salt 1 tbsp 1 tsp crushed red pepper

Procedure:

Place chicken in blender and blend for 1 minute, add grated cheese, cream cheese, tomato salsa, lime juice, garlic, cumin, ground chili pepper, salt, crushed red pepper, blend for 1 minute

Heat the tortillas wrapped in a paper towel in the microwave for 30 seconds, then transfer them to a clean work surface, spread the chicken mixture evenly over the tortilla to form a tight roll, repeat the same approach with the other tortillas<

Then place them in food wrap and refrigerate for at least 2 hours, preferably overnight

Before serving, unwrap the rolls and cut about 2 cm off each end, then slice into smaller pieces and garnish with green peppers, tomatoes and cilantro.
