How about this recipe for light and delicious chicken colombo, a complete and balanced vegetable dish, very easy to make and ideal for lunch or dinner.
This chicken dish is quite simple to prepare and compatible with low calorie diets.
Ingredients for 4 people:
400 g skinless chicken thighs 2 onions 1 garlic clove 2-3 tablespoons colombo powder 1 tablespoon rum 2 diced carrots 200 g potatoes cut into quarters juice of half a lemon 1 tablespoon olive oil Salt and pepper
Preparation:
Start by marinating the chicken in a bowl with 1 chopped onion, rum, 1 tablespoon of colombo, salt and pepper, and the lemon juice, then let it sit for 1 to 2 hours.
Heat the olive oil in a sauté pan, then put the chicken to brown on all sides, and reserve the marinade. Add the onion, minced garlic, and parsley then sauté for a few minutes.
Add the reserved marinade, carrots, and potatoes then cover with water and simmer for 35 to 40 minutes.
Correct the seasoning then serve the vegetable chicken colombo hot with cooked rice.
