Chicken broth with ginger, coriander, tomatoes and coconut cream

Bliss soup made with chicken broth, complemented with coconut cream alternative. Spicy thanks to chilli pepper and fresh ginger, scented with coriander.

Ingredients:

500 ml of chicken stock 200 ml Alpro Coconut Cuisine coconut alternative cream 30 ml lime juice 8 pcs cherry tomatoes 1 pcs lemon grass (or grated lemon peel) 1 pc chillies 2 tbsp coriander 40 g ginger 25 g sugar salt to taste

Procedure:

1. Bring the chicken broth to a boil
2. Add chicken breasts cut into small pieces, Alpro Coconut Cuisine coconut cream, finely grated ginger, lime juice, crushed lemongrass, chili pepper and sugar
3. Allow to simmer over low heat for approximately 25 minutes
4. Before serving, add the coriander and cherry tomatoes.
