Chicken breast on cumin

4 pcs chicken breasts 1 pk onion 2 cloves garlic 3 tbsp olive oil 1 tsp cumin crushed/whole salt, black pepper ground 1 dl vegetable broth butter Shredded vegetable salad: Red pepper, cucumber, onion, olive oil, cider vinegar, salt, ground black pepper, honey

Simple recipe for a light lunch or dinner.

Wash and grate the peppers and cucumber. Add finely chopped onion, salt, pepper, drizzle with olive oil, apple cider vinegar and let stand. Can be seasoned with honey.

Fry finely chopped onion and garlic in a pan in oil.

Add washed, de-blanched and thinly sliced chicken breasts and fry them on both sides.

Salt, pepper and season the fried meat with cumin, pour a little broth and simmer for about 8-10 minutes until the broth and stock is reduced.

If you are roasting the meat in an oven-safe pan, instead of stewing, place the pan with the stock in a preheated oven at 200 °C for 10 minutes.

Serve. Plate the fresh shredded vegetable salad and add the meat, top with a knob of butter and garnish with fresh herbs. Enjoy!
