Chicken balls with zucchini: In soup, also as a main course

A very simple and quick, light meal that will spice up your diet and add protein and fibre. The balls are delicious in any soup or sauce, and they are also great cold, on toast, or with bread. Or as light fritters with mashed potatoes…

Wash one large zucchini or two smaller ones and grate coarsely. Add grated garlic, egg and spices.

Stir the mixture and add the minced meat, the juicier is from the chicken thighs. Mix everything together thoroughly and season as needed.

Shape the mixture into balls and place them on a baking tray lined with baking paper.

Bake in a preheated oven at 180 degrees Celsius for 20 to 30 minutes – watch for them to get brown crispy spots and remove from the oven.

Serve as a side dish in soups, sauces or as a healthy fritter on its own with potatoes or mash. They are also delicious cold – the next day you can, for example, spread them into a baguette. Enjoy!
