Here is an delicious chicken and dumplings recipe that incorporate an oat flour and arrowroot mixture. This dish is so comforting and perfect for chilly weather!
Ingredients:
1 lb chicken breasts, boneless and skinless
1 onion, diced
3 carrots, diced
3 celery stalks, diced
1 tbsp olive oil
4 cloves garlic, minced
1 tsp dried thyme
1/2 cup oat flour
1/4 cup arrowroot flour
2 cups chicken broth
1/2 cup milk
Salt and pepper
For the dumplings:
1/2 cup oat flour
1/4 cup arrowroot flour
Instructions:
In a large pot or Dutch oven, heat olive oil over medium heat. Add the chicken breasts and cook until browned on both sides and cooked through, about 5-6 minutes per side.
Remove the chicken from the pot and set aside on a plate. Add the onions, carrots, celery and garlic to the pot and cook until softened, about 5 minutes.
Stir in the thyme, oat flour and arrowroot flour until combined. Slowly whisk in the chicken broth and milk. Bring the mixture to a simmer and cook until thickened.
Season with salt and pepper, to taste.
Add the chicken back into the pot. Drop the dumpling dough by the tablespoon into the soup. Cover the pot with a lid and cook until the dumplings are cooked through, about 10-12 minutes.
Tips:
To make the dumplings, simply whisk together the oat flour and arrowroot flour. Add just enough water to form a soft dough.
You can also use this recipe with shredded chicken. Simply add the shredded chicken after step 3.
This soup can also be made in the crockpot. Simply add all of the ingredients to the crockpot and cook on low for 6-8 hours
