Cheesecake is the most popular cake/dessert in our family. It is always just a dusting.
1.
Grind the biscuits and mix together with melted butter. Press this mixture into a paper lined tin (26cm) and bake at 170°C for 10mins
2.
Prepare the ingredients for the cream. I use this cottage cheese from Lidl, it has proven to be the best for cheesecake
3.
In a bowl, beat the mascarpone with a mixer / whisk. and van. sugar.
4.
Next, mix in the sour cream and 2PL of golden cob.
5.
Finally, add the eggs one at a time. Careful, not with a mixer but by hand.
6.
Pour the cream onto the cooled cake and knock with the mould. Bake at 170°C for about 50 min. without fan. Do not open the oven during baking. The cheesecake is done when the edges are firm and the centre is shaky. Leave to cool in an open oven for approx. 2hrs. Then place (preferably overnight) in the refrigerator.
7.
Pour chocolate frosting on the cooled cheesecake (pour hot whipping cream over the chocolate and let it melt). Decorate to taste and leave to set. Enjoy
