Recipe preparation steps
1 Mix the flour and baking powder in a bowl and make a well in the middle. Whisk the eggs with a third of the sugar and vanilla sugar and pour the mixture into the well. Add the cottage cheese, a pinch of salt, the rum and the crumbled fat. Knead to a smooth dough and finally stir in the washed raisins, candied lemon zest and almonds.

2 Cover the dough with a towel and leave it in a warm place for half an hour. On a floured surface, roll out a rectangle 3 cm thick, then fold it over to form a typical trough. Place on a baking tray lined with baking paper and bake in a preheated oven for about one hour (electric oven 200 degrees C). Brush with melted butter and sprinkle lightly with icing sugar during baking, repeat this about four times.
