Cheesecake with crumble and forest fruits

1.5 cups semi-coarse flour 130 g softened butter or margarine 1/2 cup caster sugar 1/2 packet baking powder 500 g of heavy cream 200 g of sour cream 1 pk egg 1 packet vanilla sugar 2 tbsp Solamyl fine cornstarch any fresh, frozen or jam-packed fruit grated lemon zest

This very simple cake, my mom taught me how to make, we love it at home because it’s fresh, tasty and most importantly quick to make. And if you make it in a round shape it looks like such a cheesecake. It’s very suitable for beginners because you can’t go wrong here.

From flour, butter, icing sugar and baking powder, make a crumble with your hands. Put 2/3 of this crumble into a buttered baking tin, I used a round one, tamp and flatten

Next, use a mixer to mix together the cottage cheese, cream of tartar, egg, vanilla sugar, cornstarch and lemon zest.

Place this mixture into the prepared tin. Sprinkle any frozen fruit on top and sprinkle with the remaining crumble.

Bake at 170°C for about 40 minutes.
