50 g hard cheese 50 g plain flour 50 g butter 1 pk onion 20 g bacon 1.2 liters of meat broth 100 ml white wine 1 pinch of salt 1 cup bread croutons a little chopped parsley

1. Make a light roux in a saucepan with the butter and plain flour. Add the finely chopped onion and bacon. Fry everything, pour in the broth and stir. 2. Cook the soup over medium heat, stirring occasionally, for about 20 minutes. Then blend it with an immersion blender and bring to the boil again. Pour in the wine, season with salt, pepper and grated cheese. Serve with bread croutons and fresh parsley.
