Cheese sauce

Original cheese sauce is made with white wine and tasty cheese. You can choose the cheese to suit your purpose and preferences: appenzeller for pork chops or Gouda for salmon.
Ingredients for four
100g gouda or other tasty and fatty cheese 1 dl cream 1,5 dl dry white wine 1,5 dl dry white wine 2 shallots 2 tbsp butter 1/3 tsp ground white pepper 1/2 tsp sugar (omit butter) salt if necessary
Peel and chop the shallots. Put 1 tbsp butter in a sauce pan and sauté onions for a minute.
Add the white wine to the saucepan and cook over a high heat for a few minutes until there is a couple of tablespoons of liquid.
Separate the broth. Rinse the saucepan and put the stock back in. Add the cream and season with white pepper and sugar. Bring the sauce to the boil. Grate the cheese into the mixture, check the salt and smooth the cheese sauce with a tablespoon of butter. Don’t cook, but try to serve as soon as possible.
